Elias wanted to establish the " E. Coli of humanity", and so decided to focus on the transformation of etiquette in Western Europe because it could be studied in relative isolation, it was far back enough in the past to keep present sensibilities and subjective involvements away, and it was very well documented. I think there are two responses to this.
